These no-bake cookies from Lucette Romy make the perfect low-key, nutrient dense summertime treat! Infused with He Shou Wu, Ashwagandha, Oats and Ghee, these brain-boosting, skin-supportive treats are easy to make and deliciously guilt free!

A note from Lucette

I love this recipe, as someone who has a bit of a sweet tooth, these no bake cookies are the perfect addition to my busy schedule. Incredibly quick and easy to make and easy to grab and go for a little breakfast snack or after dinner.

I started making these for picnics and every time I take these with me everyone is always asking for more. A few cookie monsters have been created!

A note from Sun Potion on the benefits of Ghee!

Ghee, the beloved clarified butter that is rooted in ancient Indian customs and used alongside adaptogens is truly an amazing fat source that can support our bodies in a myriad of ways. Ghee contains high levels of Omega-3’s and contains properties that may be good for our gastrointestinal tract. This clarified butter also has a tone of flavor which is why it is so wonderful in sweet and savory recipes, especially as it has a much higher smoking point and is suitable for many people who are lactose or struggle with consuming traditional foods with butter.

While we all know that ghee tastes amazing, it is also one of the healthiest sources of saturated fat which is essential for supporting our cognitive health. In an article from Conscious Lifestyle Magazine, they explain how “one of the richest sources of saturated fat in nature is human breast milk, clearly showing its role in the development of a healthy brain.” Another benefit of consuming small amounts of ghee over time is its ability to support or digestive tract and a clean colon as Ghee soothes and reduces inflammation in our digestive tract. Ghee can also be enjoyed at night, in a tea, potion or in these no-bake cookies as the healthy fats may encourage a healthy and peaceful night’s sleep.

 Ingredients

1/2 cup organic raw cacao

1 tbsp. Sun Potion Ashwagandha 

1 tbsp. Sun Potion He Shou Wu

1 cup ghee (can substitute for coconut oil or cacao butter for vegan version)

1 cup plant based milk (oat or almond)

1 1/2 cups creamy peanut butter

1/2 cup coconut sugar

6 cups oats

 

 Method

Prepare two cookie sheets by lining with wax paper and set aside

Combine butter, milk, sugar and cacao powder in a medium-sized saucepan over low heat

Stir ingredients until butter is completely melted

Increase heat to medium and stirring constantly, bring to boil

Boil, stirring constantly, for 1 minute then remove from heat

Continue to stir the mixture for several seconds

Add peanut butter, Ashwagandha and He Shou Wu, stirring until peanut butter is completely combined and melted into the mixture

Add coats and stir until coated in chocolate mix

Drop No Bake Cookie mixture in spoonful sizes onto the prepared cookie sheet

Allow to cool before serving, cookies will naturally harden as they cool
