I love using adaptogens and natural sweeteners in my recipes because they leave your belly feeling nourished after and also don’t give you that terrible post-sugar crash.
Adaptogens are powerful tools for so many reasons… since they literally “adapt” to whichever environment they are in, they also help our bodies to do the same. How magical is that? For instance, if you are tired and need some energy, Astragalus would be beneficial to you. This powerful Chinese herb has been known to enhance the immune system and also help those suffering from chronic fatigue syndrome. It's also been used to help stabilize blood sugar levels, so it's the perfect addition to something sweet! With the current world issues we are facing today and many people trying to increase immunity, this should be a daily addition to everyones diet.
Since a trip to Cusco, Peru about 2 years ago where I had the most beautiful raw vegan chocolate truffle at this cute little eco cafe, I have been wanting to recreate something similar. It was crisp on the outside and chewy on the inside, ugh.. it was so good! And it was made with the most beautiful ingredients, none of the stuff our bodies don’t love or need.
This is my take on those special truffles, but also containing some magical healing herbs and adaptogens. Dusted with Sun Potion Tocopherols on top, which is also incredible for skin and beauty health. Tocopherols are created from organic brown rice and are a super rich source of Vitamin E. Most forms of Vitamin E are synthesized from soy beans, but Sun Potion's comes directly from the rice, making it a highly clean and absorbable from of Vitamin E! Raw Chocolate Chip Energizing Truffles
Ingredients2 cups blanched almond flour 1/4 cup coconut flour 1/4 cup coconut sugar 1/8 cup oat flour 2 tbsp. coconut oil + 1 tbsp. coconut oil 2 tbsp. oat milk 2 tbsp. maple syrup 1 tsp. ceylon cinnamon 1/4 tsp. sea salt 1 tsp. vanilla extract 1 bar of good quality chocolate (naturally sweetened) 1/4 cup chocolate chips (naturally sweetened) 1 tsp. Sun Potion Astragalus 2 tsp. Sun Potion Tocos |
MethodTake the first 10 ingredients (except the one tbsp coconut oil) and place into a food processor, then pulse to combine. Taste, add your Astragalus and Tocos, plus more sweetness or salt if needed. Pulse until you get a cookie dough texture, adding more oat milk if needed- then remove from processor and add to a bowl. Add your chocolate chips and stir to combine. Roll into balls. Next, take your 1 tbsp coconut oil and chocolate bar and place in a non-stick soup pan. Heat over low and stir until melted. Take your cookie balls and toss one by one into the chocolate. Place on a parchment lined sheet then into the freezer for an hour to set. Store in the fridge and devour! Top with more tocos for beauty. |
