I feel like everything we put in our bodies can be medicinal, balancing and harmonizing. Every time I create a recipe I want the food to bring forth those three things, especially when its something decadent like a chocolate medallion. This recipe is simple yet powerful with beauty enhancing superfoods and medicinal mushrooms.
Let's start with the medicinal mushrooms!
Cordyceps: This magical fungi delivers energy to the muscles of the body, enhancing performance. Taking them consistently improves your body's use of oxygen during exercise. Cordyceps are also known for their anti-aging properties! They are high in antioxidants that are known to fight cell damage, reducing potential disease and keeping the body vital and strong.

Lion's Mane: A long time favorite of mine for memory support. As a yoga instructor, I need my mind to be sharp, clear and focused. When I am taking Lion's Mane I see a noticeable difference in these areas, I never forget a sequence! This lovely mushroom assists the brain in forming new brain cells. It is a wonderful preventative for Alzheimer's and other degenerative diseases. I recommend this daily in water, tea, coffee, smoothies OR these delicious chocolate medallions!

The coconut oil and coconut manna moisturize your body from the inside out, making your skin radiant and glowy. Cacao is a natural mood elevator and anti-depressant, bringing you back to your natural state of joy. Raw honey is one of nature's most powerful medicines, it can be very soothing to a sore throat. It is also a prebiotic, meaning it nourishes the good bacteria that live in the intestines.

MethodBlend everything except toppings and pour into a baking sheet lined with parchment paper Refrigerate for about 15-20 minutes (you don’t want it too hard) Use ring molds to cut out medallion shapes chocolates Top the medallions with an assortments of nuts seeds and flowers |
