Vegan, gluten-free cookies that bring the uplifting, protective energetics of Astragalus. Thank you, Brianna, for this immunity-boosting recipe!

Our immune system is essential for our survival. Without an immune system, our bodies would be open to attack from bacteria, viruses, parasites, and more. It is our immune system that keeps us healthy as we drift through a sea of pathogens. There are many ways to support and strengthen your immune system. Food, and in particular, medicinal herbs, are very effective at maintaining a robust immune system.

These delicious almond butter cookies are superpowered with Astragalus, Gingko and Ginseng. While these lovely herbs are optional for the recipe, I highly recommend trying one or all three! You will feel so energized and full of vitality after consuming one of these cookies! Astragalus (Huang Qi) has been a foundational herb in Traditional Chinese Medicine for hundreds of years. It is included in formulas to support Qi (chi), or the conceptual “shield” which serves to protect the body. It is well known as a tonic to strengthen the immune system.

I love vegan, gluten free desserts because they are way easier for me to make than traditional baked goods! You can’t really go wrong. Of course everything tastes earthier and not as rich, but what you do taste is the dense nutrition and nourishment.

 Ingredients

1 cup gluten-free rolled oats

1 cup almond butter

1/3 cup almond milk

1/3 cup ground flax seed

1/4 cup melted coconut oil

1/4 cup lightly toasted almonds (finely chopped)

1/2 tsp. vanilla extract

pinch sea salt

1/4 cup pumpkin seeds/pistachio (chopped)

1/2 cup vegan chocolate (melted) 

option to add

1 tbsp. ginseng powder

1 tbsp. gingko powder

1 tbsp. Sun Potion Astragalus


 Method

Preheat the oven to 400 degrees F

Mix all of the ingredients together in a bowl

Form into balls and place on a baking tray lined with parchment paper

Press down on each to flatten out the cookie

Bake for 10 minutes

Cool for 1 hour

Place the melted chocolate in a bowl

Once cooled, dip half of the cookie in the chocolate and place on parchment paper

Sprinkle the pistachio and pumpkin seed crumble over chocolate and refrigerate the cookies until chocolate is firm
